    Yes! My favorite is brisket that's cooked just right so it almost melts in your mouth. Mmmmm.

    First off, welcome to the board!

    Second, you can't beat a Texas brisket smoked over mesquite and oak, with a mildy spicy, touch of sweet, house made BBQ sauce. :anitoof::anitoof:

    They ain’t wrong about the TX bbq. Carolina is good but TX does it right. I went to Austin in December 2019 and that bbq changed my life haha. Thanks for all the kind words everyone.

    Went back to the junkyard today. Returned the clear lenses and sold them my black mirror and picked up the rest of the Suburban fender flares. If you’re gonna go this route make sure you get the suburban flares because they’re not two piece like the Tahoe. I’m gonna mock them up tonight when I get home from work and I’ll share as usual.

    Never been to Tx so I can't say if what I've seen at fairs etc is actually Tx bbq but if it is I'm not so much into red bbq sauces, overly smokey, or drowned in it on any meat.

    BBQ is like gumbo, everyone has their own ideas for what is the best. Most places I've eaten 'cue in central and southeast Texas don't overly sauce the meat. Some places won't even serve you sauce unless you demand it. If the meat has a good flavor and hasn't been burned, the sauce should accent the meat, not overpower it.

    Can confirm about Tey-haas BBQ. Wife and I thought the stuff we sampled in Georgia was good until we stopped into Tyler's BBQ in Amarillo. MmmMMm.

    I'm from Texas (well, I wasn't born here, but got here as soon as I could, LOL) and not into the overly smoky stuff either. No one in family is into that either. Were more into the Barbacoa and Mexican style grilling. We prefer the spicy-only (not sweet-spicy.)I've done the smoking meat in my younger years stuff, but don't do it anymore (can sometimes be sooty) and overly sweet stuff. But have it when I travel for work and dine out, occasionally. Don't get me wrong, I like sweets, but prefer them on my dessert, LOL.

    I've had the Carolina BBQ and liked it....how did we wind up talking about regional food?!

    OP, that's a nice truck! Congrats! Looks like a good project.
