I'm for any tasty dead critter that is FLAVORFUL and not overpowered by the barbecue sauce. I don't like sauces so strong that it wouldn't matter if you were eating brisket or tuna... it would taste the same!
Never been to Tx so I can't say if what I've seen at fairs etc is actually Tx bbq but if it is I'm not so much into red bbq sauces, overly smokey, or drowned in it on any meat.That’s something that people who’s never had TX BBQ would say lol
BBQ is like gumbo, everyone has their own ideas for what is the best. Most places I've eaten 'cue in central and southeast Texas don't overly sauce the meat. Some places won't even serve you sauce unless you demand it. Can confirm about Tey-haas BBQ. Wife and I thought the stuff we sampled in Georgia was good until we stopped into Tyler's BBQ in Amarillo. MmmMMm.
