After some test fitting/trimming the new carpet was in and I replaced the shift boot with a much nicer one.

finding a new seat wasn't easy. the vast majority had rips tears or were badly stained.

there's a few places that sell replacement headliners but they were all too expensive IMO, after a few youtube tutorials and a trip to the fabric store I had a new looking headliner with only minor imperfections. beats spending $200+
Where did you get that shift boot? Mostly the item circled in this photo? I have the core shifter and their dust boot is crap.

Looks great! I am buying carpet from OC as well. I am getting the cutpile, but it is giving me the mass backing option because of sound and it says it lays down better.OC auto carpets, it did lay down smooth eventually, however it took a lot of effort. I would recommend leaving the carpet in the sun to make it more pliable.
Bendable metal tabs that wrap over the pedal & the factory rubber pads.maybe they just lay on top of the metal with some adhesive?
