I pulled in 3rd a majority of the time, and only shifted to 4th on flat ground; which the route I took to the junkyard was nothing but hills.
I think I remember you set PE to come on at 2500 RPMs, and I don't think I really came close to touching that just cruising along.

Correct, 2500rpm. See below, the left pic is the parameters for PE on your truck. The right is how I have my truck set up. I can cruise at 75-78mph up a slight grade at 14.7. Much like a carb'd engine I try to give it all the gas it wants if I'm moderately to heavily accelerating.

Dodge Dana 44 and Dana 60 my brother, dad, and I pulled from the junkyard. Hauling them back to the house from storing them at my buddies place.
