I was reinstalling my IAC Valve and tightened it too much and the threaded part sheared off in the throttle body. Anybody else have this problem and how in the world would I get it out?

Depends. Can you post a picture of the carnage so we can see exactly what you're dealing with?

That's the problem with the IAC; has that huge sized nut to tighten it with, but it's flimsy cast aluminum and takes like zero effort to snug it down...and not much to break it, as you've found, especially using the big honkin' wrench required to fit it.

I actually got it out by taking a wide flathead screwdriver, kind of putting it in at an angle and was able to turn it out that way. Thank goodness I had the old one still sitting around, and the new one didn't fix my problem anyway, so I was able to get it back together and going.
