Why do guys prop their hoods up with sticks n junk like that?

most likely because of how low the truck sits the tires are tucked up in to the bay when laid out so theres no room for hinges or other support

After all the work that goes into these trucks, they can't fab something "clean" to hold the hood up?

Even that! Give them something unique to look at or catch the eye of a passer by relevant to truck/car show scene. And yeah, it looks like a chunk of PVC, least he could have done was color matched it! Hah
