The ECT can be checked with a DVOM meter. Haynes manual has a table with resistance and temperature. I have checked mine by heating it with a heat gun and watching resistance. The sensor by the thermostat and the one for the instrument cluster have the same values.
Likewise, the MAP sensor can be checked with same meter, but requires an inexpensive hand vacuum pump/guage.
I'm all for changing plug and wires as routine maintenance, but not so much sensors, especially because of a lot of the store parts store tend to sell a bunch of lower quality stuff.
