Is there anyone out there that may have swapped the stock 5.7 vortec for a simply carbureted 350 or 383 that deleted the wires and or ecm that could pass on what they did. I simply would just like to get rid of everything I don’t need. Not overly concerned about cab or chassis wiring just engine compartment.

You have to keep your ECU to run the transmission or get a standalone controller. You'll need a TPS on the carb if you go that route.

The distributor runs just fine without computer input, but you'll lose some (all?) timing control. Consider swapping in an old large-cap HEI.
