Did you take a picture when the key was on and reinstall them when the key was on?
I don't think you can do it right with the key off.
I recommend turning the key to on(not running). Install the tach and speedo needles at zero. I'd use a GPS to verify the speed is correct. Measure the voltage at the battery and install that needle. Fill up the fuel tank and install the fuel needle 1/8" past full.
The oil pressure is probably going to be around 20 psi at idle on a warm engine. The coolant temp is probably going to be about 180 at a warm idle.
