I know its not Chevy, but leather is leather. These are the headrests from the back seat of my Jetta. I dont know what happened to them unless its sun damage, but it wont wash off. No matter how much I scrub. How do I fix this? It looks like **** when you look in my back window. The front side looks fine, this is just on the back side that faces the outside.

Death by sunshine. Try some 'Nik Wax' cleaner, followed by their leather treatment. Available at shoe stores or biker shops. Or check some headrests at the wreckers, but they could be just as bad.
