This subject sparked my interest as I noticed the offset in my truck as well.
This gist: From a top view, the pinion is always perpendicular to the axles, so the engine and trans must also be perpendicular.
Additionally: As long as the working angles cancel each other on both ends, the driveshaft doesn't care if it's sideways or up and down.

I would venture that GM chose to keep the driveline in a straight line to avoid compound u-joint angles.
