OK... question for the people who have swapped to an 4L80. Do need to do anything special or is it an easy unbolt, drop out, install job? Also what is the difference between the two?

Nothing worthwhile is ever easy.
Shorter driveshaft, different flex plate, different converter. You'll probably need some sort of transmission controller as well considering your current trans isn't electronically controlled.
The main difference between the 60 and the 80 is strength. 80 is a little bit heavier and longer and has slightly different gear ratios.
Here's a link to my 4L60E to 4L80E swap thread I did on my red truck.

I got away with my original flex plate in my 1500. Could only use 3 of the 6 torque converter bolts, but that's how the 60 was.
Yeah I know it's possible (I think you were the one who told me that in the thread) but I just didn't like the idea of only using three bolts.
I have 2 trucks. One has a 4l80e, the other a 4l60e. If the 60e so much as hiccups, it'll be replaced with an 80e. No f*ing way I would remove that trans without replacing it with the 80e.
Of course, keeping the fluid BRIGHT RED in the 4L60E may deny you the opportunity to ever shoehorn a 4L80E in there....
