For the 96-00 C/K truck, in particular the K2500, what are the most common thread pitches that one would encounter while working on the truck? (e.g., M6x1.0, M10x1.25, etc.)

M8-1.25, M10-1.50. Japanese cars used M10-1.25. The engines used mostly NC 'Murica threads.
Sometimes even UNF like on the 7/16-20 harmonic balancer bolt. I just went to O'Reilly's and bough their little assortment boxes of Metric and SAE in the self help section. Usually I can find what I need.

Crank bolt is 7/16-20 too then. I have a chunk of threaded rod I made an installer out of. Destroyed a few building an LT1. The crank hub didn't look seated but it was. That's OK, I still have like 2 feet of it.
I have spare hardware under my metal working table, separated into separate coffee cans. Bolts, big bolts, long bolts, washers, nuts, screws, brass fittings, hose clamps, etc. Every time I get parts at Pull-A-Part I get the attaching hardware, even if the old stuff is good. When I part out a car, I keep as much of the hardware as I can. I don't segregate it by size nor by metric vs SAE, I simply match up the threads when I need to. I rarely have to go to the hardware store for bolts. I've saved so much money this way. It does help that when I do need bolts, the hardware store is only a mile away.
