If you do not have any state inspections, cut the cats. Run 2.5 duals. X pipe about as close to right under the cab, then a flowmaster 40 or 10 SI/SO on each pipe. Then tailpipes either straight out the back, or 45'd

My old 95' Yukon GT (TBI) had factory manifolds and Y into a single 3" IN dual 2.5" out Flowmaster Super 44, sound was awesome and more low end. No cat work or anything. That being said, when I do the ex on my 00' OBS Tahoe, it'll be true 2.5" duals with cat delete and an x-pipe. Will be running Flowmaster Super 44's again, I loved their sound. 3" stainless slash tips out the back for exit and tune to remove CEL code for the o2's. Only reason I don't like straight out the back exit is relocation of factory spare, but that's why i have a Surco roof rack coming ;). Just my 2 cents.
