91 k1500 overheating

I have a 91 k1500 with a overheating issue. I was driving down the road and the water temp maxed out and I pulled over and then the went back down to normal with in a couple minutes. What could cause this?

Coolant was a little low. No leaks and radiator was replaced a couple months ago.

It might have gotten hot enough to burp out an air pocket. Top it off, burp it as well as you can (heater on full, top off radiator with engine running), and try again.
