The 2.87 came with either a .68 or .8 5th gear. You likely got the .68. I would have gone for the one with the 3.XX first gear in your application. They're all tough as nails.
You are right. That's the one that is coming. I by no means know anything technical. Whats the difference? What benefits will I gain from the 3.27.

With the kind of money I'm spending I want the best.

It's just a lower first gear and different gear spread is all. They're all rated to 600 ft/lb.

They asked my gear ratio which is 3 73. I figured they knew what they were talking about.

So let my current fly?

I'd let the order stand where it is.

Unless you have experience with other first gear ratios for that weight of vehicle, diff ratio, tire size, and engine torque it's a tough call!

It really is a subjective matter. You got the tallest overdrive and that may have been what they were steering you toward. In a heavy truck, I would personally prefer that lower 1st gear.

So the 4l60 cross member doesn't appear to need changed or modified in some way. Just a different mount. Cool.
Yea. It seems pretty straightforward. The only thing that needs modified is my floor for the shifter. There maybe a "cut out" spot for a shifter I'm not sure.

There is a spot on the firewall for the MS to go thought.
