I recently bought a 95 chevy Cheyenne 3500 4×4. It is geared really low 4.56 the truck is mainly going to be used for highway use. Maybe a dozen times a year will be used for hauling bales horses and cattle. Looking at changing gears should I go 3.73 or 4.10. right now going 105-110 km rpm are 2500-2600 RPM fuel mileage is horrible 8-9 mpg

I have wee 225/75/16 tires and a 4.10 with my supercharged big block dually and see 10.7mpg highway. This would be the equivalent of a 31" tire with a 4.56. Don't get your hopes up too high for mileage, these things are pigs! But if you're not going to haul a lot and it's a big block I vote 3.73 with mileage being your objective. You may even be able to find one in the junkyard, sell yours, and get your money back.

If it has a BBC you might get into low double digits for mileage regardless of gearing.
Yeah it's a 7.4 I did take it to the city one day and at 200km I wasn't even at half. But driving to town and on country roads it eats fuel 200 km and your at a 1/4 tank left.

I found a set of 4.10 close to me he wants 500 for them both. So I was thinking could go that route and put a little bigger tires on.
