so a few a month after I changed my head gaskets I realized I didn’t put the head grounds back on the motor, is there any serious damage that can occur? I’m going to put them back on soon but I’m in the middle of moving and don’t have time right now. Could this also be the cause of the truck feeling slightly more sluggish?

As long as you atleast have a ground from the battery to the fender you'll be alright till you can replace the one from the head to the firewall. If not you can add one pretty easy. That way everything in the cab has atleast a decent ground.
