When I flog the old girl around a hundred miles an hour, foot to the floor, I am getting two codes for O2 sensors under voltage. No codes ever if I drive normal.

I don't know if I have room to reach the port and get the hose in the crack of the hood, then drive down the road at a hundred. I did just change the fuel pump with the finest Chinese delphi one, and it seems to be fine that way.
Also, the tail pipe is pretty black.
Sensors are newAnd the fuel pressure? A weak fuel pump would lead to excessively-lean fuel mix, which means sustained low-voltage at the O2 sensors.
Are the O2 sensors connected, and have you checked the wire harness for damage?
How old are the O2 sensors?
