There is way too much going on with a system like this to remove the battery cable while running the truck - that test shouldn't be used on anything made after say 1975. Who knows what you screwed up.

I'm hoping it's just something simple. I didn't get a chance to try and swap batteries, I got hit with a storm this afternoon, so I've been cleaning up limbs as soon as the storm passed over. This week has been a damn struggle!

Yes and no. A good battery does an excellent job of smoothing out the charging system spikes and ripples. However, your truck's electronics are rugged enough that you shouldn't have fried anything unless you shorted it or hooked something up backwards.

What's your alternator output voltage while running? Did you wire brush both the battery posts and terminals clean?

Honestly, it sounds like a separate issue. The battery light always comes on when the engine stalls out because the ignition switch is on but the alternator isn't charging.

I wasn't able to test it after installing the new alternator, but my buddy said it was showing 14.5 volts before I took off for home on Friday.
I wire brushed and greased the terminals and got them nice and snug. Then I got home and nothing.

I've got great news! I swapped one of the DieHards from the crew cab into the red truck, and it fired right off and is running like a champ! My multimeter is showing the alternator is charging at 14.6 amps, but the battery was also low, would I be running into any issues there? Batteries are too expensive for me to be cooking a couple before I get everything dialed in.

FYI don't forget about the warranty on the Odyssey, not sure when you bought it but they're free replacement up to four years from the purchase date.

How would I go about getting it warrantied? I bought it through Summit but it doesn't seem like Summit carries the model I bought anymore?
I'm beginning to think it's something I may have between installing the new AD244 back in May, and early last week when I noticed the alternator wasn't charging? I didn't do anything out of the ordinary, honestly installing the first AD244 went smoother than anything else I've done to this truck in months.

Looks like step one in your situation would be to contact Summit and see if they'll replace it. If not, they want you to go and get the battery load tested somewhere and get a copy of the results, and then email that to Odyssey directly as a warranty inquiry through their "Contact Us" page.

Hell yea, I'll contact Summit and see what I can do.
I took the battery to my local NAPA and had them test it, and it's the damnedest thing, testing from the top post the battery reads fine; just in need of a charge.
Testing from the SIDE post, it says right out of the gate the battery is no good, I'll go back and get a printout of what all it said. I'm not sure of the specifics, I only had them test it since I was running short on time this afternoon

Sounds to me like you may have a similar issue to the one I had with that Optima yellow top years ago... Some kind of internal failure at one of the side posts.
