New Interior... Could use some suggestions

So I have a 91 c1500 with the light grey silverado trim package. The interior was showing its age and my original plan was to have it all redone with OEM material and keep it looking stock until I found that the material for the seat and door panel inserts is no longer available. Now since my plans have changed I am looking for some ideas. What have you guys done?
