Best tire size to go with for my K2500?

Hey guys, I need some advice on what tires I should get for my 1996 7.4 k2500 gmc suburban with 4.10 gears. I currently have 285/75r16 tires on 16x6 Wheels from a 2007 2500 Silverado on the truck. I just got a set of 16x8 wheels with a -20 offset wrapped with 315/75r16 tires. Because of the offset they fit perfectly in the rear but I can’t get more than half a turn in the front. So I’m planning on getting new tires and I’m hopping someone can chime in with your experience on tires and off-road. The 3 sizes Im after are 255/85r16, 285/75r16 or 305/70r16. I live in Az so the majority of my off-road is on compacted dirt or loose sand and occasionally I’ll drive up north to see some snow so would the 255 pizza cutters be better suited for an HD suburban or the wider 305’s? Or settle in between with the 285’s

Can't go wrong with a 285 75 16. Too wide for me on the stock wheels, but with a 16x8, that should be perfect. Plus being a popular size, they are plenty of options and the pricing is probably the best bang for the buck. Currently have 275 55 20 on my 2500 and it loves it. Only a hair shorter than the 285s
