1996 6.5L K3500 thermostat swap from 195 to 190 height/length question

My truck gets to close to 210 (temperature) on the highway. It has a single thermostat. I pulled it out and it is a 195. I was looking to swap that to a 190. The gasket was in bad condition anyways, so doesn't hurt to do this now. I realize it may still reach close to 210 once open, this is more of a question of the thermostat height issue - is it compatible..
I won't be hauling much but I will be taking long drives up and down mountains.

The 195 which I pulled out is 64mm wide at flange and 59mm in height. I think that's ok, but it's 84mm in height so 25mm more than mine. Will it still function in my truck? There are other thermostats which match my dimensions perfectly available but all are rated for 195, none at 190 at my width. I've heard this is a good replacement - acdelco with the plastic seal inside as well (referring to the link)

Opening at 190 doesn't mean it will cool to 190. It'll probably go to 210 again if that is the state of the cooling system.

The "overall height" in the linked AC Delco 190 thermostat is not 84.30 mm afterall. It was a few mm shorter than the thermostat I pulled out, so it fit and worked fine
