I'll be cheering you on! I set a performer on my engine during the cam swap to see if there was any interference from the AC compressor etc. I couldn't find any show stoppers telling me no.
If I was doing a 383 I would definitely go for it.

It is certainly possible. The spark could be shrouded a bit from being recessed.
Could be the lack of EGR needs some supplemental tuning as well. I haven't run into that before. Two changes at once is not an ideal situation to diagnose. I would definitely take care of the spark plug reach issue...
The ones you listed are only 3/4 reach. If you still have Vortec heads, .700 reach is correct.

I was looking at this during my cam upgrade. They appear to be drilled for both patterns. Not sure about the port alignment. Summit sells the same head under their own brand.
