Engine chugs and tries to die on cold start

Hey everyone, I have a 97 with the 5.7 Vortec. When I start the truck for the first time of the day, I have to let it warm up before putting it into gear. If the engine does not get warmed up and I go to drive it, it will chug and try to die if I don't feather the throttle (sometimes it dies even while feathering it). I can rev the engine in park when its cold with no problem, but once I put it into gear and rev the engine, it tries to die.
Before I bought the truck, the PO replaced the spider injector, I have replaced the fuel filter, plugs, wires and dist rotor and cap, IAC, throttle body gasket, all ACDelco.

It almost feels like trying to get a car moving in 4th gear from a dead stop, if you know what I mean. Could it be a torque converter? Thanks for your help!

Edit: No engine codes on my OBD scanner.
