1995 7.4 454 glowing exaust manifolds.

What's "HOT"? Because the exhaust manifolds get red? Under sustained high engine speeds, they may get hot enough to glow a bit. What is the actual water temp? Is the tail pipe black and sooty? Any black smoke coming out of it? As was asked before, how is the throttle response? A good indicator of being clogged. Does it sound like it's struggling to breathe?
