1998 5.7 Random acceleration lag

5.0 to 5.7 swap, when accelerating normal the truck will randomly lag. I can put the pedal to the floor and it will come out of it, but I cant figure out what is causing this. Its a manual transmission that has been rebuilt and a new crate engine. Ive brought the truck back to the shop that did...
