Cranking the keys to make the truck level, does this really put much strain on the front suspension/drivetrain? And what would be easier leveling keys or just cranking?

Cranking level is generally alright, but cranking up from stock height will put added strain on your front end. And if you are going to do it, don't waste your money on leveling keys. They don't do anything for the GMT400's. And also remember to get an alignment after cranking!

I've done as much research as I can I think I know the answer but I'm gonna ask anyway. I have a 88 c1500 with a 2" alloy coilspacer my front fender is sitting at 35". If I had a 1" bl could I fit a 285/75r16, the one I am looking at measures in at 32x11. If it is possible what offset wheel would I get. My theory behind this i found a member with just a 3" bl and 33x11.5r15. So i figured the 285 should "tech" fit. Thanks in advance

both. $300 for parts (free labor if I do it myself) and another $300 to take out the knockouts.

That's crazy. My techs would kill to get 3 hours to do knockouts. Up here its .5 hour a side. So it would have been 100 bucks. That ducks men. On a side note did the ball joint spacer help. I don't have one but I'm wondering if I should purchase one.
