Can you fit a 285/70-17 tire on a 17x8 rim with +10mm onto a 2wd c1500? the truck has a 3" body lift. Or would it be better to run a 265/70-17?

Sure. Might have to trim a little or do some persuading with a hammer. But nothing noticable. Like around front bumper or rear of front fender. Right now Im stock with 31's and have no problems. Soon Im gonna level the front and run 33's. I know thats gonna take some work with the sawz-all.

Shouldn't have a problem. I'm clearing 33's with no trimming on a k1500.

Personally, I don't agree with making a 2WD look like a 4WD...but some trucks can pull it off....so more power to ya!
