I've got a vortec 350, comp 08-801-8 cam, Promax heads with 185cc intake runners, 2.02 intake valves, 1.60 exhaust, wieand street warrior intake, 1.6 roller rockers, msd street fire intake, I need to know what size carb I need, I have access to a 600 and a 750 but I think the 750 will be too big and Im not sure if the 600 is going to be too small, thanks.

Math's say you need a 563 carb with a 6700rpm redline. I have a 600 on my 406 and it runs fine.

If you have both, you can jet one up or the other down as needed. Try both, see what you like.

It's not going near 6700 rpms lol, this trucks a 5 speed flatbed truck, it's set up for torque, I use it as a daily but it's hooked to trailers a lot and used to haul feed and hay

You'll want the smaller venturis of the 600 for torque production, as velocity and atomization will be slowed too much with a 750.
