Personally, I love the early interior. My truck is a 1994 with almost every option and it's really a great place to be. Mine has the power cloth bucket seats and I've been on a 8 hour road trip with a few friends and none of us were even a little bit sore. The rear seat passengers weren't very cramped, but they were also under 5'6", anyone taller would have a hard time fitting back there for long trips. The console is way bigger and more durable on the older interior, mine has the pull out cupholders in the dash and the two pairs in the console and they all work pretty well, the stock radio looks super unique, especially if you have the graphic equalizer, though I do wish they had CD players and not just a cassette deck, but I guess this dash originally came out way before CDs were mainstream so it's hard to fault it there. Anyways, the dash is pushed pretty far back so on extended cabs, so there's a ton of room, I like the shape and style of the door panels, but I do wish they had backlighting for the window and lock buttons, overall I really like the older dash. Pretty much everyone that gets in the truck loves the dash and the style of the drivers section with all the buttons and the green LCD screens and green cluster backlight. The graphic equalizer is also a fan favorite. It's not perfect though, the gauge cluster is a bit cluttered on the tach versions, the rubber steering wheel that came on most of these never really holds up well, the climate controls are needlessly complicated to a newbie, I wish more models had the power mirrors, the glove box is useless, and the cardboard backed door panels are a little head scratching. Now that doesn't mean I don't like the newer interiors, the gauge cluster is super clean and easy to read, I've always liked the din and a 1/2 stock radio, even if they are kinda junk, the climate controls are almost too good, if a bit unreliable; having a CD player is nice, the door panels seem to hold up a bit better, and I love that almost every button is backlit. I definitely have some complaints with the newer interior though. The glove box is bigger for sure, but they all seem to have latching issues and sound like they're made of the cheapest plastic GM could find. I mean it's barely a step above a second gen dodge truck. The seats seem to rip more often and aren't quite as comfortable, but that's entirely subjective, the console is small and has plenty of crappy plastic, don't even get me started on the door handles, and while the white backlighting on everything is more modern (by 90's standards) the green backlighting on everything in the older interior is way better looking and just has more character. Overall I like both a lot, but the older dash has more character and style.
