Open bleed screw and let fluid out for a second or two (Stop before the pedal hits the floor)
So won't the pedal want to travel back up or will having the screw open draw it towards the floor? Only thing confusing me is WHERE the pedal will be during this process.

But you should not bother with bleeding until you inspect/correct the rear brakes as it will help a lot.
I got home from work earlier and looked at both rear drums and this is what I noticed:

The metal finger that rests on the adjuster on both sides are bent out about 1/4 of an inch.
The shoes look okay, but could use a replacement soon. The hardware doesn't look bad, but it would probably be worth the time and replace shoes/hardware. Not the greatest picture of the adjuster, but I could put a flathead screwdriver between the adjuster and the finger.

Biggest thing I noticed, was the brake cable on the pass side, was pushed out of the drum and bent, effectively stretching the cable internally. So that's most likely why the parking brake doesn't work. The drivers side looked good.

As to why my pedal goes 3/4 of it's travel with no resistance, I don't know. Still a mystery.

That's normal

That's not normal. Needs attention.

I just did mine with all Delco parts from RA. Very happy. Last did it 4 years ago with cheap crap from autozone etc and had problems. It's not difficult but it's tricky and can be a PIA.

If it's still jacked up on stands you should click the toothed adjusting wheel down to adjust the rear brake shoes out. Keep fitting the drum and feeling if any tension when you try to turn it. Try to adjust both sides as much as you can so they feel the same and don't bind. That may/will improve your pedal. It will certainly improve your braking.

Try the bleed method I've suggested when you get the other stuff sorted. Like I already mentioned if you get air into the ABS you will have a sh*t pedal and will have to set it off and bleed to fix that. I still think you probably have air in the lines.

I happened to notice the HF jack stands. I hope those aren’t the ones with the recall.
I'm not sure, I didn't know about any recall. Whenever I buy new jackstands, I always test them by raising the column to the highest point, and tapping the top with my hand to see if it moves. I bought a pair of six ton from HF did the test and the column collapsed into the body. I returned it and got a new set that was good.

They may be fine but it’s definitely worth the five minutes to check. Unfortunately (at least for me), they only give you store credit instead of a full refund. I thought I was smart by saving a buck and picked up a set. Used them for months before the recall came out. Pretty scary to think about.

FYI this was an email I got a couple weeks ago

"
To the Harbor Freight Community:

I'm writing to apologize. I often reach out to tell you about Harbor Freight's commitment to quality and all the investments we've made to deliver quality tools at the lowest prices. Your trust matters deeply to me and I'm proud of how far we've come. So when we have a product recall, it hurts.

A few months ago, we recalled our Pittsburgh 3 ton and 6 ton steel jack stands (SKUs 56371, 61196 and 61197) due to a manufacturer's defect. We asked customers to return them and receive a gift card that could be used to purchase replacement jack stands. I felt terrible about that recall because you should never have a concern about the safety of any of our products.

Today, I feel even worse. I'm disappointed and embarrassed because we've identified a welding defect in a small number of the Pittsburgh 3 ton steel jack stands (SKU 56373) that replaced the recalled jack stands. We're now adding these jack stands to our recall. Unfortunately, this defect wasn't discovered during the initial recall investigation. If you own these jack stands or any of the jack stands in our original recall, whether or not you have had an issue with them, please stop using them immediately and bring them back to your local Harbor Freight Store for a full cash refund or store credit (see details here).

We have investigated all of our other Pittsburgh 3 ton steel jack stands (SKUs 56371, 56372 and 57308) as well as the Pittsburgh 6 ton steel jack stands (SKUs 56368, 56369 and 56370) and Pittsburgh 12 ton steel jack stands (SKUs 56374 and 56375) and did not find the defect. Although none of these other jack stands are being recalled, if you own any of them and have any concern whatsoever, please bring them back and we'll give you a full cash refund or store credit for those as well.

I want to apologize to all of our customers. While we've dramatically grown our team of engineers and inspectors, and intensified our tests and inspections, I assure you that the lessons learned from this will drive further improvement.

As the owner and founder of Harbor Freight, I want you to know that we stand behind every product we sell and that safety will always be our top priority."
