Im pulling a engine on my Suburban (1999 k1500 5.7l 4l60e). There are bolts that hold the Converter to the Flex plate (i hope thats the right term) I have to remove them before i disconnect the Engine Right?

Yes you should. Technically you don't "have" to but you risk damage if you don't. I wouldn't risk it for how little time it takes to remove the bolts

Also if you left the TC attached to the flex plate you would have to move the engine that much farther forward before you could think about going up with it

Yes, the torque converter bolts need to come out and slide the converter back into the trans a little. Be sure when it goes back in that you have to pull the converter up a little to meet the flywheel, If they are touching, something is not lined up right.
