Yes the oil temperature will rise, but my plan is to switch to a synthetic oil that can handle higher temperatures. The manufacturer of my crate engine suggest to go 3 oil changes before switching to synthetic to allow everything to wear in.

I feel like I'm running hot already since its leaking so much, my temp gauge is always sitting at 70ish celsius, and I usually don't remember my '94 going much higher than 40ish.
And this is almost right after start up so.
Now keep in mind this is a Canadian truck so I'm not sure what your guys temps look like in the USA, mine goes 40C on the low end to 100C in the middle and 125C on the high side. Maybe I'm just not used to it?

70C=158F
100C=212F
125C=257F

Your truck should run between 88C (190.4F) and 99C (210.2F) with a 90C (194F) thermostat in it.
I've never seen a Celsius thermostat before so don't quote me on the exact thermostat temp for your truck.
Check that, now that I think about it, I have seen 90C stamped on some thermostats.
You may want to resolve why the truck is running 100C+ before you delete the oil cooler unit.

My truck has never seen more than 94C (201.2F) even when towing 6000lbs.

I meant it ( the temp gauge in the cluster) ranges from 40-125, not running at that. Its running at around 70C.

Here is how my temp gauge looks. This is a 1993 but its the same, except with my '96 it is on the right side of the speedo..
You must be registered for see images attach

So my needle is sitting about one tick over the larger/bolder mark between the 40 and the 100, and if I'm pulling the hill at the coulee it goes up a couple more ticks..havent seen it at 100 or break 100 yet.

Rodger that. It's more than likely an inaccurate gauge.
I did delete my oil cooler lines before my engine spun a rod bearing. I saw no rise it engine temps.

With my new engine, I went back to the oil cooler lines, but I made my own with barbed fittings/fuel injection clamps/fuel line.
I keep a close eye on the whole contraption though.

So you figure the gauge is reading too hot?

O.K. I misunderstood the temp gauge thing. My apologies.
It sounds like the gauge is accurate enough.
If the truck is staying close to the 70C mark, then I think your good.
Deleting the oil cooler lines won't change that temp.
You will see a rise in kPa oil pressure. Mine gained roughly 8psi of oil pressure according to my gauge.

Okay, I was just worried my engine was getting too hot since I am not used to seeing the gauge there (going from my '94 to this '96) and seeing as how I dropped almost a 3L jug of coolant into it and the coolant tub is still drained empty for whatever reason, on top of the fact something is leaking ! lol
