engine problems

I have a k2500 suburban 5.7 350 smallblock, sometimes I like to rev the engine when messing with my friends, but I can't seem to hit anything past 3,500rpms without the engine almost stalling when I let off. I'll let it hit 3,500rpms and let off and then it'll die down to about 200 rpms where it sits for about 3 seconds and hopes back up to 900 rpms where it usually idles. what's the issue?

Start with removing the throttle body and completely cleaning it.
