You're going from essentially a 31x10.50 to a 33x12.50. That looks completely different.

Do you think 285/75 16s will be a decent upsize from 265s?
My truck in the avatar has 285's with about a 1 inch crank. I had it at 1.5 cranked and it really rode like crap. It rubs slightly at 1 inch near full lock. My truck has 3.73's and does ok but probably not something I would want to do with 3.42 gears.

What would be a good size to fill up that empty space?

It's a catch 22. The bigger, wider tire will need the truck cranked up so in reality your still not filling the space.

285's are the next step up from 265's. I'm not sure there's much in between. Not to say there isn't some odd combination of wheel width/offset/tire size that works that I'm not aware of.
