Temp gauge reads 110-120 after warm

I have a 94 k2500 5.7. Gauge goes from bottom to about 110 when it’s warm I disconnected the gauge and grounded it for gauge to read max temp. So I replaced the sender. No change. Is there a different sensor that reads different resistance for different temps. Plugged in no problem but is it possible there are different sender options?
What resistance should it read when it’s cold?

Yes, there are different sending units. If the parts store looked-up the sending unit by application, you probably have the correct one. Especially since two sending units give the same result.

What temperature is the engine really operating at? How do you know?

This could just as easily be a thermostat problem as a sending unit problem.

The truck is most definitely coming up to full warm 195. I did not measure it but feeling the upper radiator hose.
