Engine temperature

Wondering of this is normal my truck never gets over the 160 mark . Or the second slash on the temperature reading . Is this normal because when I owned a 2002 Chevy half ton my truck always ran a 210 all the time. I replaced the thermostat I replaced the temperature sensor all that and it's still only reading 160 I'm wondering if this is normal

I guess the consensus is that it’s the gauge that reads off. Wouldn’t hurt to verify actual temperature but it’s probably fine. Read this.

Temperature Sensor/Gauge

So my 96 K1500 5.7 according to gauge is running cool. Do these gauges tend to run below actual temperature(168°)? Heat cranks, no codes, no visible signs of running rich, upper radiator hose HOT and lower, not as, but still hot. Aside from just swapping in a new sensor any ideas. Are those...

Point an infrared thermometer at the water neck / other places and see how close it is.
