I don’t know what intake manifold to use
Well doesn't your 1988 use a standard spread bore intake manifold with a tbi adapter plate, bolted to the intake manifold.

If so, buy a a spread bore carb like the Q-jet or a spreadbore to square bore adapter plate & run a holley carb.

7.4 big block did, (at least they did through '91) but not the '87-'95 small blocks. They as well as the 4.3 had specific TBI manifolds with the 3 bolt flange.

So what does that mean for the process

Means you'll need to custom fab a 3-bolt TBI to (insert desired carb bolt pattern here) if you want to retain the TBI intake. You see, the inner 4 bolts (intake to heads) on '87-'95 are canted at 72° not 90° like the '86 and older.

Alternatively if you want an actual carburetor intake, you'll need additional machining for the bolt pattern angularity or a new/used set of heads from an '86 and older engine.
