I don't have experience with that controller, but I will say Jake's is considered the most knowledgeable source on the 4L80s on the LS1tech website. He does his own design, testing and machining in-house. I would call him and discuss what your goals are. He's kinda local to this area, but known across the board...

I'd be well wary of running at full line pressure. When my 4L80E was (disabled MAF sensor due to missing fuse) the up-shifts were pretty rough and when this was discussed on the forum the consensus was that full line pressure was tough on the transmission.This would most likely be for the next truck that I put together. I had asked Jakes about building me a full manual 4l80e, and this is what they steered me towards. The only thing that I'm leary of is this controller makes the trans run at max line pressure. But - I don't know much about transmissions, and Jakes does...
Would be better to do a TH400 with a manual valve body for full analog, unless you specifically want the OD lock up, which would be added as an "on-off" switch.
He's probably talking about the maximum normal range of fluid pressure? Which is around 150-175 psi IIRC. Runaway pressure is something different. That's when the pressure regulator valve malfunctions and as a result, the pump pressurizes the fluid uncontrollably, and for this pump is around 600 psi.
