IMO, go for a 383, your choice of crate engines.
more juice and known tune for your choice of tuners.

How much $$$ do you have to spend? I tow with a stock internal (fresh) 350. A blackbear tune and true dual exhaust. Mine does pretty well, but you have to be willing to turn some rpms when going uphill.

A 383 would have been better, but the 350 works. Another note - most 383 crate motors (that I have seen) want you to run premium gas. I run 87 octane in my 350.

I figure 30-40 over on the bore and a step up cam should do anything i need it to so

Sounds like a plan but I agree install the mpfi if you don't want to go back in and swap the sfi. Now for what it's worth I bought the gm ht383e motor and it said plug and play. I've been using it for 3k miles and developed a po300code. I double checked everything accept a intake leak but guys a work insisted it needed to be tuned. I had a hard time believing this since gm did not require it. Plus ive heard guys on hear didnt tune theres and it ran fine.. idk what made mine or the scenario different but I bit the bullet and had a coworker tune it with hp tuner software and he advanced the timing 3degrees and so far the ecm is no longer detecting a misfire. Been watching it each day with my autel scanner and so far its checking out normal. I know this doesnt answer your question but my point is a rv cam is not that extreme. I would say your fine but @Schurkey may know this answer

The stoke of the 383 may have changed it as far as the 3 degrees but i will continue to look and see if someone around here can tune a 98 if it was next gen after there are 40 that can lol

You can always purchase through blackbear tunes. I was originally gonna go that route , just turned out a coworker had the hp tuner software and drove a 4wd gmt400
