If you leave the gauge hooked up, how does the fuel pressure respond when you try to rev the engine up?

P1375 code shows as Crankshaft Position Sensor problem, have you checked the wiring for it? A no / intermittent signal from the Crankshaft Position Sensor can cause a no start or extended cranking condition.
Have you double checked injectors to make sure they're in the correct position? Sometimes the new improved EFI spider isn't very well marked as to which injector is which or at least mine weren't.

Have not checked the crank sensor wiring, will do that today. I have had that intake off so many times. I think I failed to mention at first it would start and die 2 seconds later. I thought possibly VATS but there is no security light, as in no bulb. There is also no signal wire going to the little blue box under climate controls or wire going to dash for signal wire

Might be a stupid question, but did you check the gear angle on the distributor when you replaced it. I believe when you rotate it on the shaft the teeth will line up differently. Either way you will have to have it checked with a scanner.

In regards to the crank sensor, my 98 suburban had strange issues similar, but not the same and it turned out that the ground for the Crank sensor was getting intermittent contact.

Gear angle? So there were 2 different gears? Where is the crank sensor ground?

I've dealt with a similar issue. Threw all sorts of parts at it. In desperation I took it to a local repair shop. They said it needed a new fuel pump. Having already installed a new one - with good pressures, I had it towed back home. I was advised on another Chevy forum to check/replace the two grounds wires on the frame (passenger side, down by starter. One to the engine block, other to the body (fire wall under the evaporator. One of the grounds crumbled while removing it. The other looked OK. I made my own ground straps, reinstalled them, and no more issues.

I know, it seems too easy. It's easy to do, and worth looking into.

Thank you, I'm gonna try it

Gear angle? So there were 2 different gears? Where is the crank sensor ground?

If you look at the gear on the distributor, the rolled pin that holds the gear in place goes through the peak of one tooth and the valley of the one on the other side. If I remember correctly, but I could be wrong. Theoretically even if you put the distributor in the exact same position as you took it out you could still be off. It's just worth double checking the actual cam angle correlation (timing)

On the front of the motor at the bottom of the timing cover is your crank sensor with 3 wires running to it. One is ground, one is 5v reference I think and the 3rd is the signal wire. Out of nowhere the ground on mine went bad, it wasn't hit and I live in Phoenix so corrosion isn't that big of a factor... easy fix though once I found it.
