Is it possible you have a wire to the o2 sensor that is partially broken? If the a knock sensor low voltage code is thrown the computer assumes the worst and goes max retard. Can you datalog the live spark advance, map, rpm, and watch actual knock retard? If so do that and report back when the knock is showing up. Another thing you can try is pump it full of the highest octane gas you can get and some octane booster and see if it shows up still.

Check for the headers contacting the frame or anything too. It could be false knock from something. It would likely not register at lower loads, because the knock threshold is different at different loads.

Can we get TPS too? And cam retard offset?

I hav a hunch, and it seems you're lightly accelerating or cruising in the videos? You should have more timing. Max I've seen is 29... You should be in the 30's cruising.

The most I have seen is 28/29 not a touch over that. I have to run some errands here shortly and I’ll hit the highway and record those. Yes those were lightly accelerating and a wot and cruise set 60-70

OK, my hunch is incorrect. I thought cam retard was causing your lack of timing. However, maybe it's simply in the tune.

I'm. It sure if that scanner is returnable... Maybe you should buy a tuning software package so we can see what the maps look like. You can also log with that same software

What are your fuel trims like when it is under load? Perhaps shoot a video of the long term, short term, front 02 sensor voltages and the MAF sensor reading.

As I suspected its running lean. If you are running 10% ethanol fuel one suggestion I would make. Drop the stoichiometric air/fuel ratio from the stock setting of ~14.7 to 14.1:1. Every aspect of the fuel delivery is based off of it. Cold start, Warmup, Open loop, Closed loop, and even WOT. E10 gas has a stoich value of 14.1:1. Running on the value correct for normal gasoline of 14.7 will make your engine run lean and force the PCM to richen the mixture to compensate as best as it can.

I just go to the normal gas station and get gas. I live in northern Indiana. Normally run 87 octane and recently started running 93 to see if that will help.

why would this change in the middle of August/September only after this work was done?
