It's just really weird that the PCM reads my actual speed, while the speedometer shows high across the board, and acts like thers was never a swap done. This is way outside of my realm of what I understand

Like I said, it is a different stepper motor on the Denali cluster than the stepper motor that is on the OE cluster. The steeper motor, is an electric motor that the indicator needle is pushed onto. So as the steeper motor get signal from the ECM, the speedo needle moves. Being that the Denali cluster has a 120 MPH speedo, it has a different steeper motor. Easy fix, just adjust tire size to make the speedo speedo read correctly. Of course, this needs to be done with a programer.

I'm understanding that part, and will look for someone with a programmer within the next day or two, but my quick question is, wouldnt it technically still be off due to the PCM still reading the correct speed?

Being a different steeper motor, the ECM doesnt know this, so it is still set for the OE stepper motor. When you see it in a code reader, it looks rite, but being a different steeper motor, it doesnt show the same speed. The Denali stepper motor, may have more windings around the motor or less windings IDK, but this would make the needle read different. I would think, if you swap in your OE stepper motor, the speedo would top out saying 120 while your going 100. Only the speedo has a different stepper motor on the Denali cluster. All of the other gauges have the same type of stepper motors. You could swap out any other stepper motor and it would work rite in the Denali cluster. But, the stepper motors will only read rite for the same gauge. So if you swap a stepper motor, it needs to be for the same gauge. Gas gauge to gas gauge, temp for temp, oil for oil, and bat for bat. They are not interchangeable. Oil will not read rite if it is swapped for any other gauge, like temp ECT and the samw is true for all the stepper motors.

I see now, things are starting to click together, I appreciate the information! But basically if I get the speedometer recalibrated for the 120 speedometer, everything will work right?

Yes. Mine does. Keep in mind that I adjusted the tire size setting to get the 120 speedo to read correct. So the tire size that mine is set to, is not the actual tire size that is in my truck.

Thank you for letting me know they are fragile, I'm at the point that if i break it, I'll replace it, but the aftermarket 3rd brake lights dont have many good recent reviews, seems like all of the good reviews are from several years ago.
Most of the aftermarket brake lights seemed to have went down in quality (I.e. down the *******) since last year. I bought an Anzo and Spec-D unit for my 97 a couple weeks ago and neither were any good. Spec-D made my dome lights stay on and the Anzo unit’s plug spades had to be bent in a little and the cargo lights didn’t work. Wasted over $70 in junk. The only ones that seem worth while are the cheap eBay ones and even those don’t work correctly, but hey, all the functions work. The Anzo’s brake light works, but not as impressive as my old Spec-D unit.

That's what I'm seeing, and that's kinda why I wanted to try and retrofit the factory 3rd brake light. I seen a few that looked like good quality here https://www.protuninglab.com/lighting-third-brake-light-chevy-c10---ck.html but they look to be pretty high dollar.
I'd hate to buy a high dollar light, and it has the same issue as every other
I bought an Anzo years ago. Its Its still in good shape, but I did have to resaulder one of the connections for the cargo light on the drivers side. Its been all good since. I have some LED strip lights, that I am going to put under the top bed rails. I will tie this into the cargo light. So when you hit the cargo light switch, they will also come on. You can see the 3ed brake - cargo light in this pic.
