Well the coolant issue solved itself, I don't smell or see anything anymore.

But now it'll randomly die...last night I was leaving the GFs house and it was like someone yanked a battery cable off, all the lights went off and the truck died.
I tried to turn it on but nothing, got out, popped the hood and started looking and suddenly all the lights started coming back on and I heard all the relays clicking, then it was back to normal. It died leaving from a restraunt but fired right back up.

Fast forward to this morning, I start it to move it and it dies right away, but fires right back up. A little later I tried it again and it did the same thing, only this time it took cycling the key 3 times to get it to fire off, no codes other than the crank position code, and I can hear the fuel pump kick on, all my grounds look good too.

What the **** is going on??

Well first you need to finger out if fuel or spark is cutting out. Sounds like we can rule out the pump itself here. These sorts of problems are much easier to solve once there's a hard failure.

Something that trips me up is the fact all the lights went off when the truck died, I would've thought had it been the pump or something ignition wise the engine would've shut off and the lights would stay on,

Sounds more like a battery connection issue now.
Battery is what it sounds like to me.

Went to start the truck and it started normal, but as soon as I flicked on the lights it died, but it started back up fine with no issues. So that was weird.

Got a chance to actually pull the cables off later and low and behold the positive cable had an abnormal amount of battery acid and corrosion on it, and the negative cable had some corrosion too.

So they got cleaned and greased and I'll keep an eye on it for the next few days. Maybe time for a new Odyssey and the Big 3 finally.

It makes a world of difference when the battery connections are clean and free of corrosion. I had a 94 LeSabre that had its connections corroded and wouldn't start and would sometimes want to die, and did die a couple of times. Sanded the corrosion off and ran like a champ!

Well went for an almost hour drive today and didn't experience any issues; it seems to shift a little softer now compared to before the electrical issue, but it could be my imagination or something.

Missed out on a bunch of good **** at the PAP today, a camper shell, a 16K hidden hitch, steering knuckles off a 99 2500 4x4, as well as 3 complete Escalades. So I guess next weekend I'll make a trip back out there and see what I can get.

3 complete Escalades?! Lucky!

No kidding, all three of them extremely clean! One tailgate/hatch and two barn doors; it almost broke my heart to see them in there. Decent miles on all of them, I think one had like 191K and the other two were around 200K.
Plus there was an ECSB K2500 in there too, along with a slew of other mint 400s.
