Sounds to me like the variable steering box issue
Or more specifically the EVO sensor

What is a evo sensor.

The EVO (Electronic Variable Orifice) power steering changes the pressure in the lines depending on vehicle speed. When these sensors fail they either randomly put the system in full boost for a split second at a time, or they go full boost constantly. Neither one is a good feeling.

This makes a lot of sense. It is the easiest turning gmt400 ive ever drove. Even when noy moving it is super easy to turn, almost loose feeling

And I may have created the issue. We deleted the abs and the wheel speed sensors so it is probably at full boost 100% of the time.

That definitely sounds like the EVO steering is in full boost.
