Ran to the parts store for a new AC delco sender, and issue is resolved!
Hot idle oil pressue is now good to go.
I still don't know if the 2x senders I had before were for the other clusters though.
Here is my US spec 1992 5.7/5 speed.
I'm starting to wonder if I have the wrong sending unit, or cluster issues. This is new oil cold oil pressure (high idle). Tried a new sending unit today, same results.. but didn't look close at the part # for pressure rating. Waiting on a mechanical gauge...
My understanding is the ECM looks for PRND signal and that changes running characteristics.
Mine also has a shift light, which I don't really care about. Not sure if that's on the chip though.
With the help of the member Skyd, I have finally nailed down what is causing my high idle.
His issue was a faulty ECM causing idle issues, instead of replacing my ECM I tracked down some friends who had a couple used ones stashed away for me to try.

Which explains why my idle might be higher while moving.. but doesnt quite solve the extremely long high idle time siitting still.
I will eventually post what I find.. if I can somehow find the issue.

I have sprayed the intake again thinking it has to be a missing vacuum leak. Checked the booster connection, vac lines again. No signs.

I have replaced the IAC (I use all genuine parts) and it functions like it should when setting base idle etc. If it had the plug replaced and a lead was switched would that cause it to be lazy returning to idle? I have gone through everything else, I'm going to have to start checking for odd...

Do I shim the manual trans up as instructed? Hope it doesnt mess with the shifter position etc.
Edit: Jammed the spacers in while it was on the lift. Guess I'll see how things are once it's back on the road.
If things weren't all closed up here in Canada I'd consider something else. But I have the time and parts so it's going in.
I am doing the 3 stage prep and por15 paint on all parts, even the holes I drill, spacers etc before it gets re assembled. It'll live a summer only life so the rust...
