I am curious if my 1989 Silverado has the original brake calipers. Is there any way to tell? Would they have a date code and where would it be located on the caliper?

No date codes on calipers that I know of.

Does it matter that they're original? If they were, I'd bet that they're full of crap, and the pistons are half-seized. If so, the sooner they come apart for cleaning, or get replaced, the better.

If you have JN3 brakes, you need to upgrade both the front and the rear, along with the master cylinder and booster.

I will look tomorrow at the Service Parts ID label on the truck's glovebox door to determine if I have JN3 brakes.

I did some research and found your post dated Aug 10, 2022, about upgrading GMT400 brakes.

They might have “Delco” cast on them somewhere, I changed my originals out on my 92 a couple years ago but didn’t look for it. I know the original wheel cylinders that I changed in the last year had the “Delco” casting on them.
