1996 GM 10-bolt 8.5 axle (I assume it's the K1500 bone stock axle specs):
What is the bearing race O.D. on these if I wanted to replace the wimpy G80 with a True Trac? (It's important... I need to import the right bearing kit from the States.)

From the Eaton Differential Application Guide install notes for an 8.5/8.6" C-clip axle TrueTrac (Part number 913A481):

"All Eaton differentials made for General Motors 8.5" and 8.6" axles require special bearings. For axles with small bearing bores (race O.D. or 2.89"), usually found on vehicles prior to 1999, bearing LM102949 and race LM102911 are required. For axles with large bearing bores (race O.D. of 3.06"), usually found on vehicles from 1999-2013, bearing LM603049 and race LM603012 are required. Manual locking hubs recommended for front axle applications."

This kit from Motive (Part number R10REMKT) has the correct LM102949/LM102911 bearings and races to drop an aftermarket Eaton carrier into one of the 10 bolt housings that came in these trucks.

Oh my God, thank you my good fellow!
I was researching this until midnight local time and got away from my keyboard pretty confident it's 2.891" O.D. (but not 100 percent sure at the time).
I discovered this kit is also 2.891" - Richmond Gear 83-1021-1 and includes Timken bearings and races.

I have sourced a potential 14 SF 6 lug, but its from an 88, are there any issues that would I need to know before buying that would prevent swapping into a 98

As long as the axle is from a 4x4, it'll bolt in, 2wd axles are narrower by a couple inches. You'll need a conversion u-joint since the 10 bolts use a different one, don't remember the one right off hand.

In the same boat currently and some relevant answers here. One difference I’m noticing is rebuild kits are different for 97 down and 98 up. Not that, that would matter as far as installing an 88 into a 98.
