Carb Swap Wiring Delete

Truck is a 1990 454SS

So, I've got my motor pulled and at the machine shop I thought I'd do a little cleaning up. One of the main things I want to do is cut down on the wiring mess. I want to get rid of as much as I can. What exactly can and can't be deleted?

I run a digital MSD box and one wire distributor.
Fuel system is all stand alone now.
Radiator has electric fans that have a stand alone harness
Waterpump is electric with it's own harness.

I don't use the ECU at all so I can't see why I'd need a knock sensor anymore, or any of the TBI sensors, ect.
A/C has been deleted for a mach pulley setup
If I convert over to a full autometer guage cluster then I will have a new temp senor, oil pressure sensor, speedo, ect.

My question really is, what HAS to stay, right now I've come up with....

The altenator harness, headlight/blinker harness, starter harness, and the little light that's under the hood (love that thing).

I'm thinking seriously about pulling out everything except the light harness and rewiring the rest of the truck.
